Jharkhand, India is one of the major producer of Tamarind in India popularly know as ‘Imli’ in local language. The tamarind tree of height approximately 30 ft to 60 ft produces a pod-like fruit that contains an edible pulp used in cuisines around the world.

The pulp of the fruit is also used for making traditional medicine and metal polish. Tamarind seed oil is also extracted from the seeds. Tamarind fruit when ripened is more edible and used as sour agent to give a sour taste to food. Tamarind paste has many culinary uses including a flavouring for chutneys, sauce, curries, and the traditional drink . Tamarind sweet chutney is also very popular as dressing for many snacks.
